Mexican Burrito Bowl

Ingredients:

  • 1 onion
  • 1 pepper
  • 1/2 cup mushrooms
  • 200g black beans
  • 200g corn
  • 1 cup lettuce
  • 2 tomatoes
  • 1/2 avocado
  • 1/4 red onion
  • 1/2 lime

Instructions:

1. Cook the onions and peppers in a pan for 5 minutes

2. add the beans and corn and cook for another 5 minutes

3. In a separate bowl, dice the avocado, tomato, and red onion and season with salt, pepper, and limejuice

4. Top the lettuce with the two mixtures and your favorite mexican hot sauce
