Falafel Bowl

Middle Eastern cuisine lends itself naturally to a vegan diet and this dish takes full advantage of the excellent combination of flavors

Ingredients:

  • 1/3 cup couscous
  • 300g falafel
  • 1 bell pepper
  • 1/2 cucumber
  • 2 tomatoes
  • sprig of mint
  • 1/4 cup soy yogurt

Instructions:

1. Cook the falafel in a pan on medium-high heat for 5-7 minutes, stirring occassionally

2. place the couscous in a bowl with boiling water and let it sit for 5 minutes with the lid on, chop the vegetables

3. add all the ingredients together

4. top with soy yogurt
