Ingredients:

  • 1/2 cup brown rice
  • 2 cloves garlic
  • 1 onion
  • 2 tablespoons curry powder
  • 2 cups cauliflower chopped into small florets
  • 2 large carrots
  • 4 oz coconut milk

Instructions:

1. bring 2 cups of water to a boil, add the rice and let it simmer for 20 minutes

2. in a separate large pan, add the garlic and onions and let cook over medium heat for 3 minutes

3. add the cauliflower, carrot, and curry powder and let cook for 7 minutes

4. add the coconut milk, turn the heat to low and let simmer for 15 minutes or until vegetables are tender
