Dhal Curry

Ingredients:

  • 1 large piece of naan
  • 100g dried yellow lentils (about 1/2 cup)
  • 1/2 onion
  • 1 tbsp turmeric
  • 1 tsp vegan butter
  • 1 tsp cumin
  • 1 tomato
  • 1 clove garlic
  • 1/2 red chili pepper
  • 1 tsp grated ginger

Instructions:

1. Preheat the oven to 200C and when ready cook the naan for 5-7 minutes

2. cook the lentils 15 minutes on medium-low heat in 2 cups of boiling water

3. while cooking add the turmeric and butter then lower to a simmer

4. fry garlic for 2 minutes on high heat in oil, then add onion and cook until translucent

5. add ginger, tomato, cumin, and chili to the garlic and onion and cook until all vegetables are soft, about 5 minutes

6. add vegetable mixture to lentils, serve hot and enjoy
