Ingredients:
- 2 cups spinach
- 2 tomatoes
- 1/2 cucumber
- 200g chickpeas
- 2 tbsp fresh or dried mint
- 1/2 avocado
- 4oz soy yogurt
- 1/2 lemon
Instructions:
1. Chop all the vegetables and place them in a bowl
2. top with soy yogurt and a dash of lemon juice
3. Enjoy!
