This recipe is ridiculously easy, making it perfect for a weeknight dinner or workday lunch. This combination of flavors never gets old for me!

Ingredients:

  • 2 cups spinach
  • 2 tomatoes
  • 1/2 cucumber
  • 200g chickpeas
  • 2 tbsp fresh or dried mint
  • 1/2 avocado
  • 4oz soy yogurt
  • 1/2 lemon

Instructions:

1. Chop all the vegetables and place them in a bowl

2. top with soy yogurt and a dash of lemon juice

3. Enjoy!
