Tofu Noodle Stir Fry

Protein-packed and filling, this recipe is an excellent stir-fry for all the non-believers who think asian food can't be both vegan and delicious

Ingredients:

  • 4 oz rice noodles
  • 5 oz firm tofu
  • 2 cups chopped cauliflower
  • 1 tbsp soy sauce
  • 1 oz peanuts
  • 1 tbsp sesame oil
  • juice of 1 lime
  • 1 tbsp ginger
  • 1 cloves garlic
  • hot sauce to taste

Instructions:

1. Press the tofu in a kitchen towel to remove excess water

2. Cube the tofu and mix with ginger, lime juice, soy sauce, and sesame oil

3. let sit for at least 10 minutes

4. cook the noodles in boiling water for 5-7 minutes or according to the packaging

5. add the cauliflower for the last 3 minutes

6. Cook the garlic with a dash of oil on high heat for 1 minutes, then add the tofu and cook for 5 minutes

7. add the nuts, cauliflower, and noodles and cook for 2 minutes more
